5 vegetarian/vegan recipes i love (baking & cooking)

I never want to take a recipe that someone else has done and claim it as my own, that’s pretty shitty considering the amount of time that has been put in figuring how to make the recipe in the first place. But I want to share with you some things I make regularly and that I love making, or things I’ve tried out just once that I’m eager to do again. I never really make a recipe as instructed so I’ll put in the things I did to adapt it to my taste as well as the picture of the meal once done. I’m only doing 5 here to avoid making this too long, but expect another part soon! Links are in the recipe name.

Easy Smoked Salmon Pasta – All Recipes

This is one of several meals that is one I had at home and asked for once I got to uni. It’s ridiculously easy, like if I’m working efficiently and just doing it, this can take me 15 minutes. So easy. This is a vegetarian post and the recipe says salmon, but honestly anything works with this. The picture has broccoli instead which I put on with the onion so it would cook. But I’ve also done this with spinach which I added when I would have added salmon and recently I made this with veggie sausage which I put in the oven and then mixed in with everything when it was done. Anything works here I swear and it’s so good and actually really filling. This is obviously also easy to make vegan, which is actually what I do at uni when I make this.

Literally, you don’t know how long I’ve gone without french toast because I stopped cooking eggs for myself/ even buying them. I was craving it one day and figured I could just look for a recipe but I figured there was the possibility they would have something I don’t eat or have in them but I found the most perfect recipe on Wikihow. It’s so easy and is actually better than when I used to make this with eggs. I reduced all the ingredients because I didn’t want to make too much, but it was still more than I intended. I’m going to start making this like once a week now I swear.

image Sweet Potato Buddha Bowl – Minimalist Baker

I love any kind of bowl, but sometimes they can have a pretty unnecessarily kinda fancy things in them that no student is going to have in their cupboards. This is a pretty simple recipe that, while I still had to make adjustments of, is fairly easy to do. Honestly the biggest adjustment I made was taking the tahini out of the tahini sauce so it was just  maple syrup and lemon juice with water to thin it out and mix it all together. The rest of the ingredients I’m likely to either have in, or can substitute with something else. I love super hearty filling meals like this, I just need to find more recipes.

I love to make myself a big batch of cookies and then eat them for breakfast (and always during the day) until I’m out. Pumpkin spice cookies are easy for me to make since I have the seasoning in and don’t really use it much, so they’re the cookies I make most. This batch makes like 50 cookies honestly. I like to make a batch every time I cook something and then keep the rest of the dough in the fridge. Dough lasts about 5 days in the fridge and this is a great way of doing it for me. I make them as the recipe says, but I don’t put the sugar on top as advised. I love these honestly, 10/10.

imageQuick and Easy Vegetarian Curry – Family Food on the Table

I’m not one to crave curry too much (though I really should), but one day I had a bad curry craving and I searched around for a recipe for a while before finding this one. I had nearly everything in including all the veggies (honestly I found this because I had spinach in and wanted a spinach curry). I made a few functional changes. Instead of drained sun dried tomatoes, I put in a can of chopped tomatoes because I needed more liquid because I didn’t have any yogurt in. I put in a bit more milk to cover this as well as more curry powder to balance this out. I feel like curry is something you really have to try as it’s cooking to see how it tastes, which I tend to not do. I just like to cook something and trust that it’s good. The recipe was so quick and easy and so so good. I love chickpeas and any excuse to eat them I will happily take. This recipe made me 2 portions so I freezed one for a later day, which I love to do but can’t always (despite the fact that I make meals for families and I’m only once person. I love this and will definitely make it more.
