8 Favorite Summer Recipes

With kids heading back to school and Labor Day on the horizon, it’s easy to feel like summer is on its way out. We’re actually 54 days into summer and have 42 left to go before the official arrival of fall on September 22. There’s no doubt that we’ll be seeing all things pumpkin-themed on the shelves in the grocery store any day now but before we jump on that train, let’s appreciate the last of summer produce.

I’ve pulled eight summer flavor filled recipes from my blog archives for you in this post. These are tried and true recipes that I keep coming back to every summer season. We’ve got everything from squash casserole to peach cake to tomato pie and more! I love these recipe and I think you will too.

This southern staple is one of my favorite ways to enjoy summer squash. We’ve got yellow squash sautéed with sweet onions and then mixed with a greek yogurt/mayo/cheese filling and topped with crunchy panko. It’s sooooo good!

If you haven’t tried roasting okra whole in the pod and then dipping it in aioli, the time is now friends! If your opinion of okra is that it’s a bit slimy, you must try roasting it. Game changer. Up the deliciousness of this recipe by sprinkling some feta crumbles over the okra in the final moments of roasting.

I always get excited about quick bread variations that aren’t banana bread! I first baked this spiced peach carrot bread 10 years ago and the recipe is a keeper! You only need one bowl and no mixer to prepare this bread and it’s full of fresh peaches, nuts and spices.

It’s finished off with a pepper jelly vinaigrette that gives you just the right blend of sweet and spicy. You’re going to go crazy for this one!
