BLACK BEAN BURGERS WITH ROASTED VEGGIE MEDLEY

Black beans vegan burgers w/roasted veggie medley
BLACK BEAN BURGERS
Ingredients: 
-1 can black beans (rinsed and drained)
-1/4 cup chopped red onion
-1 lime (juiced)
-4 tbl brown mustard
-1 chia egg (2 tbl chia seeds + 4 tbl water) 
*If you are not vegan you can use
a regular egg
**I would add 1 cup cooked rice or quinoa to
add a sticky element if you want a firmer
burger! This recipe tastes AMAZING
but the burgers were very soft and not
very firm!
Put all your ingredients into a food processor
and combine. Once you make a black bean
"paste" hit your skillet on medium heat
I made my burgers a few different sizes
but found the smaller ones cooked the best!
Cook on medium heat for 4-5 minutes per 
side or until completely cooked.
ROASTED VEGGIE MEDLEY
I chopped 1 sweet potato, 2 white potatoes,
2 apples, 1 carrots and threw on a bag of 
frozen broccoli! I roasted them on two
separate pans at 425 degrees for 25-30
minutes. 
This is a great way to use up the odds and
ends in your crisper! I love adding a sweet
element so if you haven't tried roasted
apples yet you need to!
