This broccoli cauliflower casserole recipe by Hearty and tasty tastes incredibly good as how it looks. It is loaded with different vegetables and topped with melted cheese. We got instantly hungry the moment it was out of the oven because it looked so appetizing. It’s so easy to prepare and great for a crowd.
Ingredients:
- 1 lb of cauliflower (cut into florets)
- 0.7 lb of broccoli (cut into florets)
- salt, black pepper, curry powder
- olive oil
- 2 tablespoons of milk
- 1 onion (chopped)
- 1 carrot (sliced into cubes)
- 2 pieces of bell pepper (sliced into cubes)
- 0.5 grams of cherry tomatoes (sliced into halves)
- 5 eggs
- 6.9 oz of fat cream
- 3/4 cup and 1 tablespoon of flour
- parsley (finely chopped)
- 1/4 cup of cheese
For the sauce:
- 2 tablespoons of Greek yogurt
- 1 tablespoon of mayonnaise
- 2 cloves of garlic
- chopped dill
Instructions:
Step 1:
Put the cauliflower and broccoli florets in a pot and fill it with water. Add some salt and let it come to a boil. Once boiling, add 2 tablespoons of milk and let it cook for about 2 minutes. Once done, strain and place on a casserole dish.
Step 2:
Add olive oil and chopped onions to a pan over heat. Saute until translucent, then add the carrots. Cook for 3 minutes, then transfer to the dish.
Step 3:
Add the tomatoes and bell pepper to the casserole dish.
Step 4:
In a bowl, add 5 eggs, salt, pepper, and curry powder. Beat until well combined. Next, add the fat cream and flour. Whisk until well incorporated then mix in the chopped parsley. Pour the mixture into the vegetables.
Step 5:
Spread grated cheese on top, then place it inside the oven. Bake it at 356F for about 40 minutes.
Step 6:
Make the sauce. Add 2 tablespoons of Greek yogurt, 1 tablespoon of mayonnaise, minced garlic, and chopped dill into a bowl. Mix until well combined.
