Oven baked Broccoli cheese squares – melting cheese and broccoli crumbly squares of yumminess. These square are perfect for lunchboxes, snacks, on their own or with a salad.
With only 3 ingredients, these cheese scones are a very versatile baking recipe to have up your sleeve. You can either make them on their own as they are or add another ingredient for a bit of variety. In this recipe, I have added … you guessed it … Broccoli! You can just as easily add bacon, corn, chopped chives, grated zucchini, or anything else you have to hand.

Cheese
I’ve used Parmesan for this recipe as the flavor’s nice and strong. You can also use Cheddar (equal amounts) ot any other cheese you prefer. I always use full fat cheeses and never the reduced fat ones, and it’s important in this recipe as the cheese helps bind the scone squares together.
I’ve made these with blue cheese and mushrooms before now for a slightly more adult flavor (mone are not massive blue cheese fans!).
Flour
The flour I use for this recipe is a white wholemeal flour like this one. If you can’t find self-raising, and it can be hard to find white wholemeal in self raising, then add a teaspoon of baking soda to the mix.
Most baking flours will work in this recipe.
Make Ahead Broccoli Cheese Squares
The base recipe for these is a simple, healthy flour and yogurt one. This creates a delicious crumbly base you can then add to. Cheese helps bind the mixture together as it melts and then resets as it cools, and so these squares are perfect to make ahead and get on top of the weeks lunchboxes and snacks.
They also make a good buffet food if you’ve got people coming over, and you could make them bite sized finger foods if that suits you better, or very little ones are eating.
The texture of these squares is almost like a scone. They’re different to a quiche as they have no eggs: I love the fact they’re cooked separately as you get crispy cheesy edges on every slice, rather than a quiche where you cut if after cooking. And if you’ve got kids you’ll understand, crispy cheesy edges on everyone’s portion is pretty important!
These squares will last for 3 days kept in an airtight container. I keep these in the fridge because of the yogurt, and if you prefer them at room temperature you can pop them in the microwave for 60 seconds to take the chill off them.
If I’m putting them in lunchboxes, they go straight from the fridge into the lunchbox and by the time lunchtime comes around, they’re at room temperature.
Freezing Broccoli & Cheese Squares
These cheese broccoli squares freeze really well. If you want to freeze them, allow them to cool down after cooking and then freeze them covered, for up to 4 weeks. To defrost, simply allow them to thaw fully. You can reheat them in the oven to get the fresh crispiness back, or the microwave to warm them though.
Additions
Feel free to add a whole array of other ingredients to these squares. Most other vegetables work well, but I caution against using frozen veg unless you’ve defrosted them first and ‘squeezed’ as much of the water content out of the veg as possible. The extra water in frozen foods makes these scones too damp and you won’t get the delicious texture.
Chop any other ingredients you choose to use finely so they combine with the scone.

How To Make Broccoli Cheese Squares
Ingredients
- 1 cup Self Raising flour (add 1 teaspoon of baking powder if you can’t find self raising flour)
- 1 cup Greek Yogurt
- 1/2 cup grated Parmesan cheese
- 1 cup lightly steamed broccoli processed to a fine crumb in the food processor (Note: You can replace broccoli with grated zucchini, sliced ham or chopped chives for some variation)
Instructions
- Heat oven to 400F.
- Mix all ingredients together until a dough begins to form. Roll out onto a bench top or board.
- Cut into 12 squares (or 8 big slices) and place on an oven tray with a bit of space between them.
- Bake for 15 min until cheese starts to turn golden in color
