Cheesy Orzo with Italian Sausage

Happy Sunday!!! I made this recipe about a week ago, and since it’s sooooo cold outside I figured it was the perfect time to share one of the best comfort food recipes.

Here’s what you’ll need:

1 1/2 cups of uncooked orzo- use about 3 cups if the orzo is already cooked.

1 small white onion

1 clove garlic

1/2 green bell pepper (I used a red pepper in my recipe to add some color)

1 cup of bite sized broccoli florets

1 package hot Italian sausage (about 16 oz)

Salt & Pep

1/3 cup milk

1 1/2 cup shredded cheddar cheese

Start by boiling some water and cooking the orzo per package instructions. I like to add salt to the water for taste.

While the orzo is cooking, dice up the onion and pepper and add some olive oil to a frying pan. When the oil is hot, add the pepper, onion & broccoli. Cook until the onion is translucent. Next, cut the sausage into disks and add to the pan with garlic.

At this point, the orzo should be done. Remove the orzo from the stove until the sausage is browned. Once the sausage is browned, add the orzo to the pan. Throw in the milk, cheese, and salt & pep. I also like to add some crushed red pepper for extra spice.

And that’s it! The easiest comfort food you’ll ever make!! ☺️
