Cheesy Zucchini Slice {Lunchbox Slice}

Introducing one of our family all time school lunchbox favorites – the Cheesy Zucchini Slice. It’s super easy to make and even my fussier kids absolutely love it! Make this healthy zucchini slice the night before and then pop it in their lunchbox any day of the week. It is also a really quick and tasty midweek hot or cold dinner option. Simply add a side salad and you’ve got dinner ready to go.

Cheesy Zucchini Slice

Slices are one of my personal favorites when it comes to choosing what to put in school lunches. They are pretty easy to make and bake and can be sliced into small or big slices depending on the appetite of the child you are feeding.

It’s one of those ‘mix everything in a bowl and pop it in the oven’ kinda recipes that turns out perfectly every time.

A Healthy Lunchbox Slice

The key to eating Clean  is to always start with basic, real food ingredients. This means that you are in control of what’s actually in the food you eat and recipes you create. No surprises, no nasty additives.


This simple, lunchbox Zucchini Slice is made using regular, real food ingredients you most probably already have in your kitchen. It’s a classic kid friendly recipe for a reason. 

Having a fussy kid in the house can be tiresome but as a parent it’s our job to teach them to eat the food we put in front of them. Not only is it basic good manners to eat the meals we cook, but it’s important that they learn to eat a wide range of foods for their nutritional needs too – both now and as adults.

Having said that – it can be difficult. Fussy kids are notoriously stubborn.

This recipe is definitely one I would recommend to any Mom trying to get her fussier child to eat Zucchini. The slice is packed with a full cup of grated zucchini and half a cup grated carrot. So maybe don’t let them see you make it the first time:)

Additions

When making this recipe for your fussier kids, try a couple of these tweaks:

  • Dice the onion really small
  • Use organic white flour instead of wholewheat (or half half)
  • Cut the slice into small bite size squares when serving. It makes it less intimidating for a child to try a small piece

Storing This Lunchbox Slice

Once this cheesy zucchini slice is made and cooled you can keep it in the fridge for up to three days.

I wrap individual slices and then it’s quick and easy to pop them into lunchboxes as and when you need them.

How To Make Cheesy Zucchini Slice

Ingredients

  • 2 Medium zucchini grated (about 1 cup)
  • 1 Medium carrot grated (1/2 cup)
  • 1 tsp Olive oil
  • 1 Onion finely diced
  • 3 slices Bacon finely diced (leave this out for a vegetarian slice)
  • 5 Free Range Egg lightly beaten
  • ½ cup Cheese grated
  • ½ tsp Dried Oregano
  • ¾ cup Self Raising Flour Organic (See Flour options in notes)
  • Salt and Pepper

Instructions

  • Preheat oven to 170’C / 340F. Line a baking dish with greased parchment paper or rub a little oil on the dish for a non stick surface. I used a 20cm x 15cm pan and lined with parchment
  • Heat a pan on the stove stop add onion, bacon and olive oil. Fry for around five minutes until onion is soft and translucent
  • Add cooked onion, and bacon to a large mixing bowl, add all remaining ingredients and stir with a wooden spoon or spatula until well combined
  • Place in baking dish and use a spatula to evenly spread out on the dish
  • Bake for 25 – 30 minutes until lightly golden and firm to touch
  • Allow to cool slightly before cutting into squares
  • Store in a Tupperware in the fridge for up to 3 days

Notes

  1. You can use any flour but it will change the consistency of the slice. If you use a plain flour, don’t forget to add baking powder. The ration is 3/4 cup flour to 3/4 teaspoon of baking powder.
  2. You can freeze this slice once you’ve cut into squares. Simply thaw and reheat before eating.
