Original recipe from Gino D’Acampo
Because of the lockdown there isn’t much to do and isn’t much for me to write about. I have seen a lot of people learning new skills and one of those new skills is cooking. Sometimes when you get down and feel a little lazy it’s easy to end up eating the same boring food every day, so I’ve decided to share one of my favourite recipes to make.
Ingredients:
- New potatoes
- Broccoli
- Green beans
- Olive oil
- Rosemary
- Oregano
- Sage
- Sea salt
- Pepper
- Boneless chicken breasts
- 1 large onion
- 6 tablespoons of chilli flavoured oil
- 800g of tinned tomatoes
- 1 teaspoon of granulated sugar
- 250g of mascarpone cheese
- 10 fresh basil leaves
What you’ll need:
- Baking tray X2
- Knifes
- Saucepan with lid
- Blender
- Wooden spoon
- Large pan
- Oven proof dish
Prep:
- Preheat oven to 180°C
- Peel and chop onion
- Chop basil leaves
- Season chicken with salt and pepper
- Rinse and dry potatoes
Potatoes:
- Add olive oil, rosemary, oregano, sage and salt to a baking tray
- Heat for 10 minuets
- Add potatoes and toss well
- Roast for 40-50 minutes, occasionally tossing
Sauce:
- Fry onions and 4 tablespoons of chilli oil in a saucepan for 5 minuets
- Add tinned tomatoes, sugar and a teaspoon of salt
- Bring to boil then simmer gently for 10 minuets with the lid on then 10 minutes without
- Remove from heat and blend until smooth
- Stir in mascarpone cheese and basil
Chicken:
- Heat the remaining chicken oil in a large pan
- Fry the chicken until golden brown
- Pour the sauce into the oven proof dish then add the chicken
- Put in the oven for 30 minuets
Vegetables:
- Add olive oil, rosemary, oregano and sage to baking tray
- Heat for 10 minuets
- Add vegetables and toss well
- Roast for about 20 minutes occasionally tossing
