Chicken Breast in Mascarpone Tomato Sauce

Original recipe from Gino D’Acampo

Because of the lockdown there isn’t much to do and isn’t much for me to write about. I have seen a lot of people learning new skills and one of those new skills is cooking. Sometimes when you get down and feel a little lazy it’s easy to end up eating the same boring food every day, so I’ve decided to share one of my favourite recipes to make.

Ingredients:

  • New potatoes
  • Broccoli
  • Green beans
  • Olive oil
  • Rosemary
  • Oregano
  • Sage
  • Sea salt
  • Pepper
  • Boneless chicken breasts
  • 1 large onion
  • 6 tablespoons of chilli flavoured oil
  • 800g of tinned tomatoes
  • 1 teaspoon of granulated sugar
  • 250g of mascarpone cheese
  • 10 fresh basil leaves

What you’ll need:

  • Baking tray X2
  • Knifes
  • Saucepan with lid
  • Blender
  • Wooden spoon
  • Large pan
  • Oven proof dish

Prep:

  1. Preheat oven to 180°C
  2. Peel and chop onion
  3. Chop basil leaves
  4. Season chicken with salt and pepper
  5. Rinse and dry potatoes

Potatoes:

  1. Add olive oil, rosemary, oregano, sage and salt to a baking tray
  2. Heat for 10 minuets
  3. Add potatoes and toss well
  4. Roast for 40-50 minutes, occasionally tossing

Sauce:

  1. Fry onions and 4 tablespoons of chilli oil in a saucepan for 5 minuets
  2. Add tinned tomatoes, sugar and a teaspoon of salt
  3. Bring to boil then simmer gently for 10 minuets with the lid on then 10 minutes without
  4. Remove from heat and blend until smooth
  5. Stir in mascarpone cheese and basil

Chicken:

  1. Heat the remaining chicken oil in a large pan
  2. Fry the chicken until golden brown
  3. Pour the sauce into the oven proof dish then add the chicken
  4. Put in the oven for 30 minuets

Vegetables:

  1. Add olive oil, rosemary, oregano and sage to baking tray
  2. Heat for 10 minuets
  3. Add vegetables and toss well
  4. Roast for about 20 minutes occasionally tossing
