Balsamic Roast Beef

I love my crock pot.  After years of not using my crock pot I just can’t seem to get enough of it lately.  Why didn’t I learn to love my crock pot years ago when I had kids at home and dinner time was crazy time!?!?  Being able to pop my dinner in the crock pot first thing in the morning and then not worry about it the rest of the day is the best.  I guess I’m a slow learner when it comes to some things.

How to Make Balsamic Roast Beef

This Balsamic Roast Beef is one of my go to slow cooker meals. It is the perfect dump and go dinner idea.  Dump in your beef,  mix together your marinade and pour it over the top.  All that is left to do is add the lid and set the timer! It cooks for 4 hours on high and 6-8 on low.  If I have the time, I always prefer to cook my beef on low.

The meat is done when you can pull it apart easily with a fork. It is so tender, it almost shreds itself.

Be sure and save some of the juice to pour back over the meat after it is shredded.  It would also make a great au jus if you make French Dip sandwiches with the meat.

Quick, easy and delicious!!  The perfect dinner solution.

I like to serve our Easy Crock Pot Balsamic Beef  with some roasted broccoli, smashed potatoes, with a side of these cheesy rolls.
