Declans Pancakes (and other favorite recipes!)

Good morning! Declan and I are back at my parents house today for my dentist appointment. It sure felt nice not having to pack our whole house for this trip, like we did for Christmas a few weeks ago!

Declan is almost 10 months old and LOVES to eat! We have pretty much moved away from purees to completely doing solid food, and he is a fan!

Today Im going to share several recipes that I make in bulk to have on hand in the freezer. They are all things that Declan goes crazy for, so I like to know that I have them at all times!

Also, over Christmas, my mom and I made Declan his first pancake recipe, and he couldnt get enough! This recipe is now one that I make for the freezer too!

For all of these foods when serving, we break them into bite-sized chunks (Bigger than pea-size but smaller than say, a quarter.) He does a great job of using his pincer grasp to grab each bite and bring it to his mouth. Its not fully there but doing it often is good practice!

When it comes to these pancakes, Declan will literally just shove a bite in his mouth and try to grab more super quickly to pack them in. I have to hold off on putting more bites out so that he swallows each one before grabbing another. Im telling you- babies love these!

Declans Pancakes

Ingredients:

  • 2 eggs
  • 1 ripe banana
  • 1/2 cup oats
  • 1/4 cup applesauce
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon

Directions:

  1. Blend the oats until ground.
  2. Add other ingredients and mix until blended.
  3. Cook on a hot buttered pan.

Note:

*I use a 1/4 measuring cup to scoop these out. Id say they usually end up as pancakes about the size of a fist.

*Let cool and individually wrap in plastic wrap if you plan on freezing them!

Declans Favorites

I took the Feeding Littles infant class a few months ago, which goes in depth about baby-led weaning and gives such helpful tips and suggestions of what to serve and how to serve it (safely!). From there, I searched around and tried many recipes I found on the Internet. I lovemy Inspiralizer for making spiralized veggies, so I was excited to see that she has a ton of kid-friendly recipes too on her website. She is big into baby-led weaning with her kids, so I love checking her website to find new things to make for Declan.

  • Pork, Apple, and Cheddar Meatballs
    • I cut these in half before freezing because a whole meatball is too much. I break these into smaller pea-sized bites before serving to him.
  • Spinach, Banana, and Oat Muffins
    • These are Declansabsolute favorite. He is obsessed! I make them as muffins instead of donuts and just bake them the same amount of time.
  • Carrot Cake Blender Muffins
    • Another good variation of her blender muffins, packed with lots of yummy carrots and spices!
  • Four Ingredient Broccoli Cheese Bites
    • Declan has only become a fan of these recently. The broccoli needs to be chopped very finely, otherwise it is too tough and big for him to chew. This recipe makes a ton!

Trav and I both love watching Declan explore new foods and I love finding new recipes that are packed with yummy nutrients!
