Easy Instant Pot Chicken Broccoli Rice Casserole

This recipe is fast and easy and you probably have everything you need in your pantry and freezer.

The recipe:

  • 2 Boxes of Chedder Broccoli Rice a Roni
  • 32 oz. of Chicken broth
  • 16 oz. bag of frozen broccoli
  • 2 to 3 pounds of chicken. I used boneless, skinless chicken thighs this time. You could use frozen chicken also.

Directions:

Set instant pot to the saut setting. I used some olive oil and sauted the chicken a few minutes each side.

I took the chicken out of instant pot. Added some butter and sauted the rice a roni according to box directions until golden brown.

Next I added the 32 ounces of chicken broth and the flavoring packet that came with it. Mix.

Then I added the 16 ounces of the frozen broccoli. Mix. I added the sauted chicken on top of the rice mixture.

Added the lid and set instant pot on the manual setting for 12 minutes. When done, a quick release. Stir.

You are done! Quick and easy. I did take the big chunks of chicken out and shredded them a little bit. Everyone really liked it. Fast and easy weeknight dinner.
