As you guys know, one of my favorite things to do is to find keto-friendly options when I go out to eat. Recently I went to the Souplantation by my house to check out their all you can eat salad bar options. Of course Souplantation and their sister restaurant Sweet Tomatoes is known for delicious soups and pastas, but if you’re eating keto or low carb they also have some great options!
THE SALAD BAR
I walked into the restaurant to be greeted by a seemingly endless salad bar. I grabbed a tray and a festive red plate and got to work! Most of the options in the first part of the salad bar are fair game for us keto peeps.
Skip the premixed salads and head straight to the greens, it’s more fun to make your own anyway, but all of the premixed salads had something sweet in them when I was there at least.
Greens (spinach, spring mix, romaine, iceberg) take your pick! I always go for spinach or spring mix.
Add your toppings! They have way too many to list, but some of my favorites are the shredded carrots and zucchini, cucumbers, black olives, pepperoncinis, broccoli, cauliflower, cheese, and crumbled hard boiled egg! Seriously, I love hard boiled eggs so so so much and whenever I go to by-the-pound salad bars I never get that much because they are so heavy, but at Souplantation I can go nuts haha!
Add your dressing, I’m typically a ranch or garlic ranch girl, but they have a lot of options including oil and vinegar. I use the olive oil to drizzle on the cauliflower and broccoli.
Then they have the crunchy toppings. This is an area you want to avoid with the exception of the sunflower seeds.
At this point I paid and then dropped my salad off at the table and headed straight back to make my favorite Souplantation creation, Loaded Broccoli!
To make the loaded broccoli I got one of their small red dishes with the handles and filled it with broccoli from the salad bar. Then I drizzled olive oil on it at the salad dressing station. Next stop is the pasta station, because that’s where the parmesan cheese lives! Sprinkle that on top and they also have red pepper flakes if you want to add a little kick. Then keep on down the bar until the loaded baked potato station- that’s where the real fun is! I added a big dollop of sour cream, then shredded cheese, and finally tons of crumbled bacon. YUM! You could do the same thing with cauliflower or a mix of cauliflower and broccoli.
SO GOOD! My daughter also made a salad and she piled hers with spinach, cucumbers, mushrooms, purple cabbage, shredded carrots, creamy italian dressing and a side of cauliflower. Then she added crumbled bacon and green onions in the baked potato area. She also got their sugar free chocolate pudding for dessert. From what I’ve heard they always have at least one sugar free dessert option which is really cool.
