Doesn’t it  just look amazing?! This is basically a Thanksgiving dinner rolled into one flaky, delicious little roll.

You can think of it like a homemade Thanksgiving Hot Pocket, minus the microwave or that pesky little sleeve…and the experience of biting into molten lava when you can’t wait long enough for it to cool down!

Now, while you can definitely serve it up with some veggies on the side, I happen to like it just as it is…this is the ultimate carbohydrate heaven!

Growing up, my family never made a turkey for Thanksgiving! Can you believe it? My family didn’t like how dry turkeys came out, so we always had a ham and chicken for our holiday meals. 

Thanks to my Ninja Foodi, I have begun to change that in recent years. Have you ever made a turkey in a pressure cooker? IT IS ABSOLUTELY AMAZING!

When you cook a turkey in a pressure cooker, it comes out so tender and juicy, and I am able to cook my Thanksgiving Turkey in just about 60 minutes – for a 10-12 lb bird.

How to Make this Leftover Turkey Pot Pie Recipe

Ingredients needed to make this Leftover Turkey Pot Pie Recipe

  • 1 tube large biscuits (8 count)
  • 1 cup leftover cooked turkey
  • 1 cup already prepared, cooked stuffing
  • gravy, heated and ready to serve

Directions for making this Leftover Turkey Pot Pie Recipe

Preheat your oven to 375.

On a parchment lined baking sheet, flatten biscuits until they are roughly double in size.

Place a small amount of your turkey and stuffing on half of each biscuit round. Fold the biscuit in half and use a fork to press the seams together. Press it firmly so that they don’t open during the baking process.

Bake for 11-13 minutes until golden brown.

Serve these delicious little homemade leftover turkey hot pockets drizzled with warm gravy and a side of leftover veggies for a full meal, or serve them alone for a handheld snack!
