Umm, this is REALLY GOOD Mr. FFF

Yep, folks, we have a winner! This leafy green little side dish has been requested time and time again from the veggie hating husband which means I am feeling like a pretty successful wife right now!

Truth be told, I had never had creamed spinach before. Like the gluten free biscuits, paleo sweet potato casserole and keto pecan pie, its just not something that we grew up eating in Canada.

BUT NOW THAT I HAVE? I never want spinach any other way in all the future times that I eat spinach in my life. NOT AN EXAGGERATION.

But, heres a question that may be on your mind when it comes to spinach and incorporating it into your daily meals.

Is Spinach Keto?

That would be a definite YES! Dark, leafy greens like spinach are SO important for our overall well being, especially our skin, hair, and bone health. It provides essential protein, iron, vitamins and minerals that our bodies need to thrive. This fabulous superfood is not only high in nutrients, but it is also low carb, making it a valuable food to incorporate into your meals if you are eating Keto.

You guys know that I am definitely not keto and personally believe that you should eat ALL FOODS, but I know some of you are still on the keto train

How to Make Low Carb Keto Creamed Spinach

Now that weve gathered our ingredients, lets go ahead and put together the casserole. One of my favorite things about this recipe is that it tastes so fancy, but in reality, it comes together in just a few easy steps. Easy AND delicious? You really cant go wrong!

Prepare the Spinach

Heat up your oil in a very large pan on medium heat. Cook the spinach until wilted, then toss it in a colander to drain and set aside.

Cook

Melt the butter on medium heat. Add in the onions and garlic and allow them to cook until golden in color. This should take about 3 to 4 minutes.

Combine

Add in the cream cheese, almond milk, nutmeg and salt and whisk until the cheese is melted completely and the mixture is smooth. Your mixture should look ooey, gooey, and downright delicious. Cook until thickened slightly, about 2-3 minutes.

Finish it off

You will want to make sure to squeeze out as much remaining water as possible out of the spinach. Next, stir the spinach into the pan until its well coated in the cheesy sauce. Serve it up as a side dish and enjoy your Keto Spinach Casserole!

How to Make it Dairy Free

This Low Carb Keto Creamed Spinach is an easy side dish that is great for weeknights or holiday meals! Even my picky husband requests it!

  • 2 tsp Olive oil
  • 1 Lb Baby spinach
  • 2 Tbsp Butter ((Dairy free works))
  • 2/3 Cup Onion, (diced)
  • 2 tsp Garlic, (minced)
  • 4 Oz Full fat cream cheese ((dairy free works too))
  • 1/2 Cup Unsweetened almond milk
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt
  1. Heat the oil in a VERY large pan on medium heat. Cook the spinach until nice and wilted and then transfer to a colander to drain.

  2. Heat the butter on medium heat. Add in the onion and garlic and cook until golden brown, about 3 minutes.

  3. Add in the cream cheese, almond milk, nutmeg and salt and whisk until the creamy cheese is smooth and melted. Cook, stirring frequently, until lightly thickened, but 2-3 minutes.

  4. Squeeze out as much water from the spinach as possible and then stir it into the pan until well coated.

  5. DEVOUR!
