Paleo Roasted Buffalo Broccoli

I’m going to go ahead and fully admit that my photography skills are subpar to most food bloggers, but that doesn’t mean the food doesn’t taste so damn good!  I will get there with the photos, but as for now, the pictures just don’t do any justice on the way the food actually tastes.

Anyway – enough self pity.  I’ve been making this buffalo broccoli since the day I started broccoli2on my Paleo journey.  I will confess that I was not a broccoli eater six years ago.  I hated it and thought it was absolutely disgusting because all I could think about was that I was eating a baby tree.  Now, I love it – it’s one of my favorite vegetables.  I also love to tell my kids this story over and over again any time they say they don’t like something (mainly Brayden) so that they force themselves to eat it and eventually learn to like it.  I’m a mean mom, or as Brooklyn would say, “I’m an appropriate mom.”

This recipe is so easy to make and you can adjust any of the ingredients based on how spicy you want to make the broccoli.  You can also substitute with cauliflower instead of broccoli in case if you’re like the old me, but you’ll want to roast the cauliflower about 10 minutes longer.  Do any of you like to broil your veggies after you roast them?  I always broil veggies for about two minutes just to get them nice and crispy…and kid friendly.  What kid doesn’t like crunch?!


INGREDIENTS:

2-3 Large heads of broccoli, cut into florets
2 Teaspoons extra virgin olive oil
1/4 Teaspoon Himalayan pink sea salt
1/2 Teaspoon garlic powder
1/2 Teaspoon pepper
1/4 Cup Paleo mayo
1/8 cup Frank’s Red Hot Sauce


DIRECTIONS:

  1. Preheat oven to 425 degrees and line a large baking sheet with parchment paper.
  2. Toss the broccoli florets with olive oil, salt, pepper, and garlic and then place onto the sheet pan making sure that the pan is not crowded.  I usually like to use two broccoli1baking sheets.
  3. Place in the preheated oven for 20 minutes.
  4. While the broccoli is baking, whisk the paleo mayo and hot sauce in a large mixing bowl.
  5. Add the broccoli to the bowl and combine it with the hot sauce mixture using a large cooking spoon.
  6. Place the broccoli back onto the baking sheet(s) and place back in the oven for 10 minutes.
  7. Once the broccoli is finished baking, turn on the broil setting for 2 minutes, watching closely to make sure it does not burn. *This step is optional*
