Using a rotisserie chicken for dinner is a great option for casseroles and soups. This Rotisserie Chicken Casserole is a creamy, buttery casserole with a nice buttery Ritz Cracker crunch. This casserole is really easy to make, since you have an already cooked chicken! The rotisserie chicken is juicy and moist, which unfortunately baked chicken breasts sometimes are not as moist and juicy.

How to make Rotisserie Chicken Casserole:

Start by shredding and dicing the chicken. This should be easy but be careful to separate all the bones. Mix the chicken with all the other ingredients except the crackers and butter. Crush the crackers in the packaging. Spread the chicken in a casserole dish. Top with the crushed crackers and pour the melted butter on top of the crackers. Bake in the oven and serve with some veggies, a salad, or another side you enjoy!
