Weekly Meal Plan 7/12 – 7/18

I use our weekly meal plans to help make my weeks easier! Sometimes I just need a quick list of ideas for what to make, so I know I can always go back to old meal plans to get inspired.  I hope they’re helping you too!

Ricotta pear honey toast, air fryer falafel bowls and hot honey baked chicken

  • Power Greens and Potato Breakfast Casserole
    • I use power greens (baby spinach, baby red and green chards, and baby kale) in this recipe, but feel free to use only spinach, or kale, or chards, or any combination of them.
    • You can use frozen hash browns in place of fresh potato if that’s what you have on hand, shredded a potato is not always fun or quick.
    • If you choose to use fresh potato, use it quickly, otherwise the potatoes will oxidize and turn brownish, but they will still taste good!
    • If you want to be extra fancy, use Cotija cheese in place of Parmesan (or in addition to)
  • Air Fryer Falafel Bowls Recipe
    • I’d suggest doubling the falafel ingredients if you want more for the week, the recipe makes about 2-3 falafel per serving, the entire recipe makes 8-12 falafels (depending on the size you roll them)
  • 5 Ingredient Slow Cooker Pork Carnitas Tacos
    • This recipe is easily scaled down: Simply make as many tacos as desired and save the remaining pork and tacos for leftovers.
    • If you have leftover shredded pork, it stores really well: place the shredded pork in an airtight container and pour some juices from the slow cooker over the meat. This pork freezes and reheats very well.
    • To freeze, place the shredded pork in a resealable plastic freezer bag and label with the date when it was made.
  • Pizza Burgers Recipe
    • You can use gluten free buns to make this meal gluten free!
  • Sweet Potato Pancakes
    • You can make many other kinds of fruit or vegetable pancakes. Use the recipe and swap the puree of your choice for sweet potatoes. For example, you can make savory broccoli pancakes, squash pancakes, or carrot cakes, replacing the sugar, Cheddar or Parmesan cheese for savory recipes.
  • Sausage Pizza with Kale
    •  A pre-made pizza crust or flatbread works for this pizza.
    • I find this recipe is flavorful as is, and because kids eat this, I don’t salt it a ton, if you’d like to add a little salt or garlic salt while the sausage/kale are cooking, definitely feel free to add some!
