Hello friends! Heres a short preview of the menu plan for the week: we are meat-forward this week with easy recipes featuring chicken, pork, ground beef, and turkey. We also have a lovely vegan soup for you.
And our extras this week are a lovely little shortbread cookie and a gluten free mini quiche that would work beautifully for a grab and go breakfast or as a party appetizer.

Caramel Walnut Shortbread Cookies
Not too sweet shortbread filled with ground nuts and made with toasted sugar. You can also just use granulated sugar or even some brown sugar. These are probably more of an adult cookie than a kid cookie, so that means you don't have to share!
Gluten Free Broccoli Quiche Lorraine Bites
Erin could've just made these little quiches crustless, but instead, she uses grated potato for a crisp and naturally gluten free crust. Nice! And then in goes the classic quiche Lorraine mixture of eggs, ham and cheese. Plus broccoli! Make these in mini muffin tins for little appetizer bites or in regular muffin tins for breakfast.
